Turia/Ridge gourd
Turia or ridge gourd is a dark green, rigid, and tapering healthy vegetable loaded with fibres. It has white pulp with small white seeds embedded in its flesh. Turias can be cooked on its own or with other vegetables like potatoes, beans, peas, spinach, fresh fenugreek or sweet corn and much more. The vegetable is often used in sabzi, sharks, soups, stir-fries etc. It’s also used in various regional cuisines in India from various states like Kerala, Andhra Pradesh and Maharashtra.
Storage:
Fresh Turias stay fresh and crisp if wrapped in a plastic bag and refrigerated.
Nutritional facts:
It’s a rich source of B-complex vitamins, vitamin A, minerals, anti-oxidants and average source of calcium, zinc, magnesium, manganese and potassium.
