It is hollow in the cross-section, with a relatively thin layer of flesh surrounding a central seed cavity filled with large flat seeds. The flesh is crunchy and watery. Regardless of being bitter, it’s a star ingredient in various cuisines due to its distinct taste and health benefits.
Wash the Karelas and dry them thoroughly using a towel. Keep them in a container or place them in a zipper bag, either as a whole or in pieces and refrigerate it will stay fresh for a week.
