Doodhi also is known as Lauki or Bottle gourd belongs to the gourd family Cucurbitaceae and is a running or climbing vine. It has a light green smooth skin and a white inner flesh. It doesn’t take long cooking time and is used in various sweet and spicy delicacies all around the world .Bottle gourds are especially good for old aged people and toddlers. It could be used as a healthy substitute for various dishes. Doodhis are used as a vegetarian alternative to sushi. Doodhi is
commonly consumed in the juice which helps in enjoying more nutritional benefits than being consumed in cooked form. 

Storage:
Place Bottle gourd in a Ziplock bag/Freezer bag and refrigerate them. Chopped bottle gourd should be placed in glass or steel containers, covered with cling film and then refrigerated.
